1.6 litres good-quality broth

4 teaspoons freshly grated ginger

4 teaspoons tamari

4 small sheets nori, torn, or wakame strips

200g spinach or kale

200g tofu cubes or shredded chicken

4 teaspoons sesame seeds
Method
Gently warm the broth in a large saucepan with the grated ginger and tamari over a medium heat.
Add the seaweed and allow to simmer for around five minutes to soften and release flavour.
Stir in the greens and protein, cooking gently for a further three minutes until just tender.
Serve warm, finished with a sprinkle of sesame seeds.
