Calming Broth with Seaweed, Ginger and Greens

Calming Broth with Seaweed, Ginger and Greens

Clean, warming, and supportive, this broth is designed for moments when you want something light yet sustaining. The combination of ginger, umami-rich seaweed, and gentle protein makes it easy to digest while still delivering structure and comfort.

It works equally well as a light meal or alongside other dishes when appetite is lower but nourishment still matters.

Ingredients

  • 1.6 litres good-quality broth

  • 4 teaspoons freshly grated ginger

  • 4 teaspoons tamari

  • 4 small sheets nori, torn, or wakame strips

  • 200g spinach or kale

  • 200g tofu cubes or shredded chicken

  • 4 teaspoons sesame seeds

Method

Gently warm the broth in a large saucepan with the grated ginger and tamari over a medium heat.

Add the seaweed and allow to simmer for around five minutes to soften and release flavour.

Stir in the greens and protein, cooking gently for a further three minutes until just tender.

Serve warm, finished with a sprinkle of sesame seeds.

Seaweed provides iodine and trace minerals that support thyroid function and metabolic balance, while the warm, savoury broth supports digestion and a sense of calm. Ginger aids circulation and comfort, making this a simple, restorative dish that helps steady energy without heaviness.
