Ingredients:
2 large sweet potatoes, chopped into wedges
4 chicken thighs or breasts
100g rocket
½ red onion, finely sliced
1 tbsp olive oil
1 tsp smoked paprika
1 tsp dried oregano
Juice of ½ lemon
Method:
Preheat the oven to 200°C. Toss the sweet potato wedges with olive oil, paprika, and salt, then roast for 30 minutes. Season the chicken with oregano, salt, and pepper, and cook in a pan or bake until fully cooked through. Assemble the rocket and red onion on plates, add the roasted sweet potato and chicken, and finish with a squeeze of lemon.
