Chicken Bulgogi with Kimchi & Cruciferous Greens

Chicken Bulgogi with Kimchi & Cruciferous Greens

Serves 4

Ingredients
600g chicken thighs, skinless and boneless, sliced thinly
2 tbsp tamari
1 tbsp olive oil
1 tbsp rice vinegar
2 tsp grated ginger
2 garlic cloves, minced
1 tsp honey
200g broccoli florets
200g pak choi, halved
100g kimchi
1 tbsp sesame seeds

Method

  1. Mix tamari, olive oil, vinegar, ginger, garlic and honey. Toss chicken in marinade for at least 30 minutes.

  2. Heat a large frying pan or wok, then cook chicken in batches until golden and cooked through.

  3. Steam broccoli and pak choi for 3 to 4 minutes until tender.

  4. Serve chicken over greens, topped with kimchi and sesame seeds.

Why it works
Protein packed, with cruciferous vegetables to aid hormone metabolism. Fermented kimchi supports the gut microbiome and is ideal for hormone balance.
