Ingredients:
480g chicken breast or tempeh
2 tbsp olive oil
4 cloves garlic, chopped
4 tsp grated ginger
4 spring onions, chopped
2 carrots, sliced
1 litre stock or broth
200g tenderstem broccoli or cavolo nero
4 tbsp tamari
Juice of 1 lemon
Sea salt and black pepper
Method:

Heat oil and sauté garlic, ginger, and onions for one to two minutes.

Add chicken or tempeh and cook for two to three minutes.

Pour in stock, add carrots, and simmer for ten minutes.

Add greens and tamari, cook for another two minutes.

Finish with lemon juice and season to taste.
