Ingredients
For the mackerel

4 mackerel fillets (around 120g each)

2 red chillies, finely chopped

Juice of 4 limes

4 teaspoons olive oil

Sea salt and black pepper
For the salad

2 avocados, sliced

12 radishes, thinly sliced

4 handfuls of mixed leaves

4 tablespoons pumpkin seeds

4 teaspoons apple cider vinegar

4 teaspoons olive oil
Method
In a bowl, mix the lime juice, chilli, olive oil, sea salt, and black pepper. Add the mackerel fillets and leave to marinate for around ten minutes.
Heat a frying pan over a medium heat. Cook the mackerel skin-side down for three to four minutes until crisp, then turn and cook for a further one to two minutes until just cooked through.
While the fish cooks, combine the avocado, radishes, mixed leaves, pumpkin seeds, apple cider vinegar, and olive oil in a large bowl.
Divide the salad between plates, top with the mackerel, and drizzle over any remaining marinade. Serve immediately.
