4 teaspoons olive oil

2 small onions, chopped

4 cloves garlic, chopped

8 medium carrots, chopped

1.6 litres good-quality stock

4 tablespoons red lentils

Juice of 2 lemons

Sea salt and black pepper, to taste
Method
Heat the olive oil in a large saucepan over a medium heat. Add the onions, garlic, and ginger and sauté gently for around five minutes until softened and fragrant.
Stir in the turmeric, carrots, and red lentils, coating everything well in the spices.
Pour in the stock and bring to a gentle simmer. Cook for around 20 minutes, until the carrots and lentils are soft.
Blend until smooth, then stir through the lemon juice and season with sea salt and black pepper. Serve warm.
