Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
1 tsp ground cumin
1 tsp ground coriander
500g pumpkin, peeled and chopped
150g red lentils, rinsed
1 litre vegetable stock
Juice of 1 lemon
2 tbsp hemp seeds
Method

Heat olive oil in a large pan and cook the onion and garlic until soft.

Add cumin and coriander, stir for a minute, then add pumpkin and lentils.

Pour in stock, bring to the boil, and simmer for 20 minutes until pumpkin and lentils are soft.

Blend until smooth, stir in lemon juice, and serve topped with hemp seeds.
