Ingredients:
8 small beetroots, cut into wedges
4 tsp olive oil
4 handfuls of rocket or baby spinach
4 tbsp walnuts, chopped
4 tbsp hemp seeds
Juice of 2 oranges
4 tsp apple cider vinegar
4 tsp honey
Sea salt and black pepper
Method:

Roast the beetroot with oil at 200°C for 30 minutes.
