Ingredients

½ courgette, sliced

½ red pepper, sliced

½ small sweet potato, cubed

1 tbsp olive oil

1 tbsp tahini

Juice of ½ lemon

1 tbsp pumpkin seeds
Method

Roast the vegetables at 200°C for 25–30 minutes.

Mix tahini and lemon juice with a splash of warm water to loosen.

Drizzle dressing over the roasted veg and top with pumpkin seeds.
