Roasted Vegetables with Tahini-Lemon Dressing

Roasted Vegetables with Tahini-Lemon Dressing

Ingredients

  • ½ courgette, sliced

  • ½ red pepper, sliced

  • ½ small sweet potato, cubed

  • 1 tbsp olive oil

  • 1 tbsp tahini

  • Juice of ½ lemon

  • 1 tbsp pumpkin seeds

Method

  1. Roast the vegetables at 200°C for 25–30 minutes.

  2. Mix tahini and lemon juice with a splash of warm water to loosen.

  3. Drizzle dressing over the roasted veg and top with pumpkin seeds.

Why it works
Zinc from pumpkin seeds and vitamin E from tahini support elasticity and repair.
