Ingredients:
2 eggs
1 tsp olive oil
½ small courgette, grated
A handful of spinach or kale
½ avocado, sliced
1 tbsp dukkah or crushed nuts and seeds with cumin and coriander
Sea salt and black pepper
Juice of ¼ lemon
Method:
