Steamed Salmon Bowl
Ingredients

120 g salmon fillet (or 100 g chickpeas for plant-based)

60 g quinoa
-
5 tenderstem broccoli spears

1 handful rocket
-
1 tbsp olive oil

Zest of ½ lemon

Sea salt and black pepper
Method

Cook quinoa according to packet instructions.

Steam the salmon for 6–8 minutes until just cooked, or warm chickpeas in a pan.

Lightly steam broccoli until bright green.

Assemble with rocket, drizzle olive oil, and finish with lemon zest.
