Ingredients
500g turkey mince
1 small onion finely chopped
2 garlic cloves crushed
1 courgette grated and squeezed of excess water
1 handful parsley finely chopped
1 egg
1 tbsp olive oil plus extra for cooking
1 tsp dried oregano
Zest of 1 lemon
Sea salt
Black pepper
For serving
Steamed greens or a simple green salad
Extra lemon wedges

Method

Heat the oven to 200C and line a baking tray.

Combine the turkey mince, onion, garlic, courgette, parsley, egg, olive oil, oregano, lemon zest, salt and pepper in a bowl. Use your hands to mix until the mixture comes together.

Roll into meatballs. You will get roughly 16.

Heat a little olive oil in a pan over medium heat and brown the meatballs on all sides.

Transfer to the baking tray and cook for 10 to 12 minutes until cooked through.

Serve with steamed greens or a green salad and squeeze lemon over the top.
