Avo, tomato, basil & eggs

Indulge in a delightful solo breakfast with this scrumptious Avocado and Egg Toast.

Avo, tomato, basil & eggs

Serves 1

 

Ingredients:

2 pieces of bread
2 egg whites scrambled
5 cherry tomatoes
Handful of Basil
Handful of rocket
1 avocado

Method:

Prepare your bread. Slice the avocado and place it on the bread followed by tomatoes and Basil. Add a drizzle of olive oil and season. Place your eggs however you like them on top and sprinkle rocket followed by more olive oil and seasoning.
