Ingredients -

70g sesame seeds
180g almond flour
5ml baking soda
25ml sea salt
80ml honey
80ml tahini
5ml vanilla extract

 Method - 

Preheat the oven to 180°C (350°F). Line two baking sheets with parchment paper and spread the sesame seeds on a plate.
In a small bowl, whisk together the almond flour, baking soda, and sea salt.
In a larger bowl, mix the honey, tahini, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet, stirring until a cohesive dough forms.
Take a tbsp of the mixture and form balls of dough in your hand. Roll each ball in the sesame seeds, then flatten into rounds about 6mm thick on the prepared baking sheets, spaced about 5cm apart.
Bake for about 8 minutes, or until the bottoms of the cookies are golden brown. Rotate the pans halfway through for even baking.
Let the cookies cool on a wire rack before serving.
