Ingredients - 8 corn tortillas30ml olive oil 1 onion, finely chopped 3 garlic cloves, finely chopped 15ml smoked paprika 15ml ground cumin 1 red chilli, finely chopped (adjust to taste) 75ml apple cider vinegar 45ml clear honey 3 x 400g cans black beans, rinsed and drained Toppings: chopped tomatoes, sliced red onion, diced avocado, sliced jalapeño peppers, coriander sprigs To serve: crème fraîche or Tabasco chipotle sauce |
Method - Heat the olive oil in a large frying pan over medium heat. Sauté the onion and garlic until softened and golden, about 5 minutes.
