Ingredients -

1 cup quinoa
2 bell peppers, chopped
1 courgette, chopped
1 cup cherry tomatoes
2 tablespoons olive oil
Juice of 1 lemon
50g feta cheese, crumbled
2 tablespoons chopped parsley
1 tablespoon chopped mint
Salt and pepper, to taste

Method -

Preheat oven to 200°C. Place bell peppers, courgette, and cherry tomatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for 20 minutes.
Cook quinoa according to package instructions.
In a large bowl, combine cooked quinoa, roasted vegetables, lemon juice, remaining olive oil, parsley, mint, and feta cheese. Toss gently. Season with salt and pepper.
